How to Prepare
Rinse well, then soak in cold water for several hours, changing the water two or three times to lift excess salt. Never use hot water, which tightens and hardens the strips. Drain, then toss with shredded cucumber, carrot, garlic, black vinegar and sesame oil for a chilled starter.
Storage
Keep submerged in brine and refrigerated at all times. Do not freeze; once opened, reseal and keep the strips fully covered by the salt solution.
